In my post last week, I mentioned that I have been trying to make healthier, more affordable meals for my family of five. This week, I decided to remake something that I made a lot during my last two years at Ohio University for my friends—Creamy Tomato and Spinach Pasta.
My friends and I have various dietary restrictions. Some of us are dairy free, vegetarian, or gluten free. To accommodate for everyone’s dietary needs, I used gluten free pasta instead of regular pasta, dairy-free cream cheese, and dairy-free Parmesan.
When making this recipe for my family at home, I used regular noodles and regular cream cheese. (I’m the only one in my house that is dairy/lactose free, so I just took a lactaid pill..iykyk). It tasted exactly the same and my family loved it, so 10/10 highly recommend.
