Lamb Pizza
Don Roth has a mouthwatering recipe for made-at-home-pizza — caramelized onions, garlic, lamb and, of course, fresh mozzarella cheese.
His homemade dough combines eggs, flower, yeast and water.
“Let it rise, punch down, spread onto cooking sheet, smear with olive oil,” says the College of Arts & Sciences systems administrator. “Then cook the onions until brown, grab the lamb from the grill, and top the pizza.
“Bake at about 25 minutes at 450 degrees. Then drop on cheese, don’t spare the garlic, kick the oven to 500 for 3 minutes, pour a glass of something and enjoy!” says Roth, adding, “I feel like a 16-year-old — gas is cheap and I’m grounded.”
Corona Coleslaw
One cup shredded cabbage
One cup shredder carrot
1 ½ tablespoons mayonnaise
2 teaspoons vinegar
Salt pepper and a dash of hot sauce
