The Food Studies theme has joined forces with Ohio University Culinary Services to bring local food to more students on campus. Earlier this month, produce from the Plant Biology Learning Gardens hit the shelves of the beautiful Jefferson Marketplace, located within Jefferson Hall on East Green.
Food Studies students will be delivering fresh and seasonal produce to the market weekly until the Thanksgiving break. Purchasing Food Studies produce directly contributes to funding student Food Studies summer internships. Food Studies hopes that offering produce at the new Jefferson Marketplace will give students on campus an opportunity to support local and sustainable eating. Additionally, the produce will be used by the Jefferson marketplace in salad mixes and in deli selections.
The display includes the Food Studies “Know Your Farmer” campaign, highlighting a few of the many student farmers who work in the garden. This includes Sam Fjelstul (senior, B.S.S.), Jordyn Henderson (senior, dance), Jordan S. Francisco (senior, plant biology), Charles Ndiaye (senior, plant biology), and Jeremy Oehlenschlager (senior, plant biology). More information on other Food Studies student farmers will rotate through the marketplace display.
