CAS 2410 Food Justice Principles and Practice is offered in Fall 2017 on Tuesdays and Thursdays from 10:30 to 11:50 a.m.
The course, part of the Food Studies theme, fills the Tier II Cross-Cultural Perspectives (2CP) Ohio University general education requirement.
The course is taught by Dr. Theresa Moran, Food Studies theme director.
Course Description: Food justice is commonly defined as the right of all to healthy, affordable food. In this course, students will engage in the work of community organizations in our region that address food security, food access and food sovereignty, as well as meet and discuss food justice issues with food policy officials. Students will learn about food scarcity against the backdrop of the world’s most powerful nation. Students will also learn of food waste and “second chance” food operations, which salvage usable food from institutions and restaurants. The class has an optional service learning component.
